A Taste of Hawaii Part Two: The Mai Tai
Another Hawaii-based cocktail inspired by the popular restaurant, Monkeypod. This cocktail will transport you on a tropical vacation! Incredibly refreshing, and worth the effort, you'll be making this one all summer.
To make honey lilikoi (passionfruit) foam: whip in a blender 2 parts passion fruit purée (or pineapple puree), 2 parts simple syrup, 2 parts egg white, 1 part honey, and 4 parts ice cold water until you have a smooth foam.
To make the cocktail: shake with ice 1 ounce light rum, 1 ounce dark rum, 0.75 ounce lime juice, 0.5 ounce orgeat (or amaretto), 0.5 ounce orange curaçao. Pour into glass with ice. Spoon generous amount of foam on top.
